How It Works

The Nemox Semi Automatic Gelato, Ice Cream and Frozen Dessert Maker uses a patented technology which allows a cryogenic substance with a melting point around 10°F to be sealed between an outside wall in thermoplastic and an inside wall with high thermal conductivity. This technology creates an airtight container which chills rapidly to low temperatures when placed in the freezer. The chilled container then provides the low temperature necessary to produce ice cream when used with the motor and churn blade.

Freezing the Cooling Cylinder

The most important step in making ice creams and frozen dessert is to make sure that the cooling cylinder is thoroughly frozen. Place the cylinder bowl in an upright position in the back of your freezer where the temperature is coldest. Freezer temperature should be at least 0°F, The length of time necessary to properly freeze  the cylinder bowl will depend upon how cold the freezer temperature is.

Freezer Temperature

Approximate Minimum Time for Cylinder to Properly Freeze

-22°F

8 - 9 hours

-13°F

12 - 13 hours

0°F

20 - 22 hours

Preparation of the Mixture

  • Prepare one of the suggested recipes or one of your own favorites. You can use any recipe for ice cream, frozen yogurt, frozen dessert as long as the recipe does not contain more than 1 quart (2 lbs.) of ingredients. This will allow for volume to increase during churning to maximum capacity.

  • Use peeled fruit and ingredients free of any waste matter.

  • Always chill the ingredients in your refrigerator before  pouring into the machine. This will reduce the time required to make the ice cream. Ice cream mixtures will stay fresh in the refrigerator for a few days. Shake well before pouring the mixture.

Using the Ice Cream Maker

A. Remove the motor assembly from the base cooler container.

B. Separate the lid from the motor by puling apart. Wash the cooler container, lid, driveshaft and churn blade in warm soapy water. Rinse and dry thoroughly.

C. Place the cooler container in the back of the freezer for at least 8 hours.

D. Slide the motor onto the lid until the “keyhole” part of the lid is over the hole in which the drive shaft fits.Insert the drive shaft into the motor unit. Push the drive shaft into the hole.Slide the motor until it locks in position.

E. Ensure the non-keyhole part of the lid fits between the top and bottom collars of the drive shaft.

F. Only when mixture is ready, remove the cylinder from the freezer and place on a firm, level surface near a convenient power outlet. Lower motor assembly onto the cooler container and rotate clockwise to lock in place. Plug the electric chord into the power unit. Turn the switch to on position to start operating the churn blade.

G. Immediately pour the chilled mixture into the cylinder bowl through the lid opening. Do not fill more than half way from the top, as mixture will expand during the freezing process to fill the cylinder bowl. The build-up of ice on the inside of the cylinder bowl might cause some resistance to the churning blades. The churning mechanism is specially designed to reverse direction automatically when resistance is reached to avoid any damage to the unit and signal that the ice cream is done. Let the unit run for approximately 20-40 minutes.

  • During the freezing process you can add through the opening in the lid, ingredients (chocolate, raisins, nuts, etc) finely chopped or pureed. Alcohol should not be added until near the end of the process as it significantly slows down the freezing process.

  • When ice cream has reached the desired consistency, turn the switch to “off” position and remove the power cord from the outlet. Remove the Electric Motor Assembly and lid from the cylinder by pressing the release button and simultaneously rotating the lid counter-clock wise.

H. Remove the churn blade from the ice cream. The finished result is a soft spoon able Italian ice cream. Homemade ice cream will not be the same consistency than that of hard store-bought ice cream. If you wish to firm the ice cream further before eating, this can be transferred to an airtight container for storage in the freezer.

  • You may leave the ice cream in the cylinder bowl with the lid on to harden for a short period (no more than 30 minutes) but long term freezing should be done in an airtight container.

Cleaning

After ice cream is removed and the mixing bowl is no longer cold, a damp cloth, sponge or towel can be used to remove residue before washing. All parts are cleanable in warm soapy water.

Storing Ice Cream

When the ice cream is ready, it can be left covered in the ice cream maker for approximately 10-20 minutes. Ice cream tastes best when it is fresh. If you wish to store ice cream in the freezer use an airtight container and store at 0°F or below. Recommended storage periods:

  • Ice cream made from with fresh raw ingredients - up to one week.

  • Ice cream made with cooked ingredients - up to two weeks

  • Sorbet or yogurt based ice cream - one to two weeks

Defrosted or semi-defrosted ice cream must never be put back in the freezer. Remove the ice cream from the freezer about thirty minutes before serving and place it in the refrigerator. Or bring it up to serving temperature by allowing it to stand for ten or fifteen minutes at room temperature.
