How Fagor Pressure Cooking Works
A pressure cooker is basically a metal pot with a lid. The lid components vital to the function and operation of the pressure cooker are the rubber sealing gasket, pressure regulator, and pressure relief valves. When the lid is properly locked into place on the pressure cooker, an air and steam tight seal is created. As the cooking liquid in the pressure cooker is heated to the boiling point (212°F), steam is created. Since the steam cannot escape from the sealed pressure cooker, it remains trapped inside and pressure is created. When the desired pressure is reached inside the cooking pot, excess steam is allowed to escape to maintain the selected pressure setting and keep the pressure cooker from over pressurizing. Steam pressure and temperature have a parallel relationship. As steam pressure rises, temperature also rises. The increased temperature created by the pressure cooker is why pressure cookers cook food faster than traditional cookware.
The internal cooking temperature will vary depending on the different levels of pressure created by the trapped steam. The amount of pressure is measured in pounds of pressure per square inch (psi). The Fagor Splendid model cooks at high pressure (15 psi, 250°F), the Fagor Duo mode has two pressure levels, high (15 psi, 250°F) and low (5 psi, 225°F). Both models have a steaming function for traditional non-pressure steam cooking. For the most part, foods cooked under high pressure are cooked at 250°F, which is 38°F hotter than when food is cooked in a normal pot and speeds up the cooking process considerably.

A. After continued use, the rubber sealing gasket or ring will begin to wear or dry out. Generally, it should be replaced once every 12 to 18 months or more often if the pressure cooker is used frequently. The rubber should always feel pliable and smooth; if it doesn’t, its time to replace it.
Q. How do I use the steamer basket with the trivet?
A. Some Fagor pressure cookers come with a steamer basket and a trivet. The basket is used for steaming foods without placing them directly into the cooking liquid. The steamer basket is especially useful for steaming vegetables. The trivet is placed on the bottom of the cooker and the steamer basket is placed on top of it. A. In order for the pressure cooker to build pressure, the cooking liquid in the pot has to be brought to a boil with the lid positioned and locked in place. As the cooking liquid begins to boil, steam is produced. The trapped steam will build up and compress, creating pressure. Therefore, once your cooker is loaded and locked into place, raise the burner heat to high. Electric stove owners should start out on a medium setting. As pressure builds, the pressure regulator valve will activate in accordance with the specifications and features of your pressure cooker.

The Cold-Water Release Method: For the most part, you will want to lower and release the cooking pressure as quickly as possible in order to stop the cooking process. Place it in the sink in a tilted position, and allow a small amount of cold water to run over the lid of the cooker. This will stabilize the temperature and force the pressure to dissipate in a matter of seconds. You will normally hear a decompressing sound-almost like a swooshing “pop”-once all the pressure has been released.

Q. How do I remove stains from the inside of my pressure cooker?
A. Sometimes stains may build up inside your pressure cooker from normal everyday use. A good way to remove stains is to add equal parts lemon juice and water to your cooker and heat this liquid until hot. You can then use a nonabrasive sponge to remove the stains. Do not clean the cooker with any abrasive materials as this may damage the finish on your pressure cooker.
