Juicers
Many health
experts believe raw fruit and vegetable juices provide therapeutic
benefits and nutritional support and should be a part of the daily diet. The
raw juice is easily digested and is rich in enzymes, micro-nutrients,
vitamins and minerals. Store bought juices have been heated/pasteurized
to maintain long shelf life. This process kills the beneficial enzymes
and much of the nutrients found in the raw juice. Raw juices are concentrated foods and contain
most of the nutrients from the fruits and vegetables. Juicing will
allow you to obtain many of the benefits of eating raw fruits and
vegetables without the bulk of ingesting large quantities of food.
Juices are convenient to drink and various recipes combine different
fruits and vegetables for specific taste and nutrient qualities. Try to
buy organic fruits and vegetables for juicing and use any leftover pulp
for recipes. Enjoy your juice immediately after processing as exposure
to the air begins to reduce the enzyme and nutrient content of juices.
Avoid the high cost of
preservative and additive laden juice products at the supermarket and
make your own!
There are several types of
juicers available and selecting the appropriate model depends on what
you will be primarily using the juicer for. Citrus, hard and soft fruits
and vegetables and dry leafy vegetables require different equipment to
juice effectively. Some machines have the capability to perform multiple
juicing functions.
How it works
Juice
is extracted from fruits and vegetables through primarily three methods:

Centrifugal Force
- Fruits or vegetables are inserted into a chamber and a spinning cutting blade
grinds the plant material down into small shreds and sends it against a
straining screen basket that is
spinning at the same high speed as the cutting blade. The weight of
the plant material spinning at high speed creates a great force which is
pushing against the screen. This centrifugal force pulls the juice out of
the plant material and the juice slips through the straining screen and leaves the
dry material, or pulp, behind within the screen. This type of juicer is not recommended for soft
fruits such as bananas and berries and leafy vegetables such as parsley, spinach and
wheatgrass. These juicers produce some foaming due to the high speed
of processing the juice. These units are louder in operation than
Masticating type juicers.

There
are two main types of Centrifugal Juicers:

- Full Basket Type -
This is a very effective
way to extract juice and is considered more effective than continuous pulp ejection
type machines. The speed of the shredding wheel and basket is 3,600 rpm's. The pulp from the fruits and vegetables are retained in the
basket and is not automatically ejected during the juicing
process. This allows the centrifugal force to continually
extract the juice from the pulp screen/basket. The basket needs to be emptied occasionally when
full with pulp, usually after 1-2 quarts of juice. Optional basket filters make this clean-up task easy.

Continuous Type
- A second
type of centrifugal juicer uses an angled strainer basket for
continuous juicing. The plant material is pushed down against
the spinning shredding blade and then forced against an angled
basket. The pulp hits the angled basket and centrifugal force
pulls the juice out of the shredded plant material similar to
the full basket type units, but the pulp
does not stay in the basket. The spinning plant material moves
up the angled basket and the pulp is ejected from the machine into a container
for easy disposal. This method allows for continuous juicing as
it is not necessary to stop to empty the basket while juicing.
These units are easier to clean than full basket types.

Masticating
- Fruits or vegetables are inserted into a chamber and contacts a
screw or auger type mechanism that breaks down the plant
material and then presses it against the housing, straining
screen or crushes it between twin gears. The slowly rotating mechanism
creates great pressing force on the fruit and vegetable matter and
forces the juice out of this plant matter leaving a very dry pulp
material that is automatically ejected. This slow rotating
mastication process minimizes heat and oxidation of the
juice to preserve nutrient value. This method tends
to provide a more pulpy and fibrous juice. Use requires reasonable
force to insert hard fruits and vegetables into the feed
chute and press against the auger or screw mechanism.
Large fruits and vegetables must be cut up into smaller
chunks. Attachments make machines more versatile in
preparing nut butters, pureed foods and pastas. Quieter
operation than centrifugal juicers.

There
are two main types of Pressing Juicers:

- Single Auger Type -
A screw type
single auger moves the pulp along the auger to press the
pulp against a straining screen or housing. Soft fruits
should be combined with harder fruits and vegetables as the auger needs plant fiber to move
the material along the length of the auger. Works well with leafy vegetables such as parsley, spinach and
wheatgrass. Low 80-100
rpm speed is quiet and produces less foaming and oxidation
than centrifugal juicers.

Twin Screw or
Masticating Type
- Plant matter is pushed against
two long gears that
mesh together as they turn. The fruit and vegetables are first
shredded and then squeezed between the two gears to force out
the juice. Soft fruits
should be combined with harder fruits and vegetables as the
gears needs plant fiber to move the material along the length of
the gear mechanism. Low 110-160 rpm speed
is quiet and produces less foaming and oxidation than
centrifugal juicers. Works well with
leafy vegetables
such as parsley, spinach and wheatgrass.

- Reaming
- The citrus fruit is
cut in half with outer peel left on and pressed against a slowly
rotating cone with ridges. The action of the
rotating cone against the fruit squeezes out the juice and
takes with it some of the nutrient rich white layer of the
fruit called "pith". Best for soft citrus fruits such as
grapefruits, lemons, limes, tangerines and oranges.
